Crockpot Chicken and Gravy

This is the dinner I make when the day got away from me. Four things into the crockpot in the morning, and by six the chicken shreds with a fork in a gravy thick enough to coat a spoon.

It is not fancy. It is the one my kids ask for by name, and the leftovers reheat better than the first night.

Serve it over mashed potatoes, egg noodles, or rice. Anything that will catch the gravy.

Ingredients

Instructions

1

1. Lay the chicken breasts in a single layer in the bottom of a 6-quart slow cooker.

2

2. Whisk the gravy packets, cream of chicken soup, broth, garlic powder, and pepper until smooth, then pour over the chicken.

3

3. Cover and cook on LOW for 4 hours, until the chicken reaches 165°F and pulls apart easily.

4

4. Shred the chicken with two forks right in the gravy and stir to coat. Let it sit 5 minutes to thicken.

5

5. Taste for salt, scatter parsley over the top, and serve over mashed potatoes.

Notes from our kitchen

Two packets of gravy mix is not a typo. One leaves it thin. If the gravy is thicker than you like, loosen it with a splash of warm broth just before serving.

Storage, reheating & swaps

StorageAirtight in the fridge up to 4 days. The gravy sets up cold and loosens right back when warmed.
ReheatingLow on the stovetop with 2 tablespoons of broth, stirring until it flows again. Microwave at 50% power in 1-minute bursts.
SubstitutionsChicken thighs work and stay juicier; add 45 minutes. Cream of mushroom soup swaps in one-for-one.

Questions readers ask

Yes. Two to two and a half hours on HIGH. Check at 2 hours, because breasts dry out fast past 165°F.

No. Browning adds a little depth but nothing the gravy mix does not cover.

Freeze up to 3 months. Thaw overnight in the fridge. The gravy may look split and comes back together as it warms.

Great as written. I added a splash of white wine to the gravy and it was excellent.

The two-packet tip is real. I tried one packet the first time and it was soup.

Made this on a Tuesday with zero planning and my husband asked if it was a restaurant recipe. Doubled it for Sunday.
