Crockpot Chicken and Gravy
This is the dinner I make when the day got away from me. Four things into the crockpot in the morning, and by six the chicken shreds with a fork in a gravy thick enough to coat a spoon.
It is not fancy. It is the one my kids ask for by name, and the leftovers reheat better than the first night.
Serve it over mashed potatoes, egg noodles, or rice. Anything that will catch the gravy.

1. Lay the chicken breasts in a single layer in the bottom of a 6-quart slow cooker.
2. Whisk the gravy packets, cream of chicken soup, broth, garlic powder, and pepper until smooth, then pour over the chicken.
3. Cover and cook on LOW for 4 hours, until the chicken reaches 165°F and pulls apart easily.
4. Shred the chicken with two forks right in the gravy and stir to coat. Let it sit 5 minutes to thicken.
5. Taste for salt, scatter parsley over the top, and serve over mashed potatoes.
Notes from our kitchen
Two packets of gravy mix is not a typo. One leaves it thin. If the gravy is thicker than you like, loosen it with a splash of warm broth just before serving.
