Southwest Crock Pot Chicken and Rice

A comforting and flavorful dish made with chicken, rice, and vibrant spices, cooked effortlessly in a crock pot.

Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cup rice
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes with green chilies
  • 1 cup chicken broth
  • 1 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)
  • Chopped cilantro for garnish (optional)

Instructions

  1. Place the chicken breasts at the bottom of the crock pot.
  2. Add the rice, black beans, corn, and diced tomatoes on top of the chicken.
  3. Pour the chicken broth over the ingredients.
  4. Sprinkle the chili powder, cumin, salt, and pepper.
  5. Stir gently to combine if needed.
  6. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  7. Before serving, shred the chicken in the pot and mix everything together.
  8. If desired, top with shredded cheese and garnish with chopped cilantro.

Notes

Great served with sour cream or sliced jalapeños. Can store leftovers for 3-4 days in the fridge.
