A comforting and hearty chicken stew cooked in a slow cooker with fresh vegetables and rich broth, perfect for family gatherings or cozy evenings.

Ingredients

  • 1 pound chicken breast, diced
  • 2 cups mixed vegetables (carrots, peas, and corn)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika

Instructions

  1. In a slow cooker, heat olive oil and sauté the onions and garlic until translucent.
  2. Add the diced chicken, mixed vegetables, chicken broth, salt, pepper, thyme, and paprika.
  3. Stir well to combine.
  4. Cover the slow cooker and cook on low for 360 minutes or on high for 240 minutes.
  5. About 30 minutes before serving, stir in the heavy cream.
  6. Serve hot and enjoy!

Notes

For more flavor, use bone-in chicken and remove the bones after cooking. This stew can also be turned into a creamy chicken pot pie.
