A warm and comforting chicken pot pie made easy in the slow cooker, filled with tender chicken, vibrant vegetables, and a fluffy biscuit topping.

Ingredients

  • 1 lb chicken breasts, diced
  • 1 cup carrots, sliced
  • 1 cup potatoes, diced
  • 1 cup frozen peas
  • 1/2 cup onion, chopped
  • 1/4 cup flour
  • 2 cups chicken broth
  • 1 teaspoon thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup biscuit dough (for topping)

Instructions

  1. Combine chicken, carrots, potatoes, peas, and onions in the slow cooker.
  2. Mix flour, chicken broth, thyme, salt, and pepper in a bowl, then pour over the mixture in the slow cooker.
  3. Stir to combine, cover, and cook on low for 360 minutes or high for 240 minutes.
  4. Drop spoonfuls of biscuit dough on top of the filling about 30 minutes before serving.
  5. Cover and continue cooking until the biscuits are cooked through.
  6. Serve hot.

Notes
