A comforting bowl of soup combining tender chicken, hearty vegetables, and creamy goodness, perfect for chilly evenings.

  • 1 lb boneless, skinless chicken breasts
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 cup potatoes, diced
  • 1 cup onion, chopped
  • 3 cups chicken broth
  • 1 cup frozen peas
  • 1 teaspoon thyme
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup heavy cream
  • 1/4 cup flour (optional for thickening)
  • Fresh parsley for garnish

Instructions

  1. In a slow cooker, place the chicken breasts, carrots, celery, potatoes, onion, thyme, garlic powder, salt, and pepper.
  2. Pour in the chicken broth and mix everything well.
  3. Cover and cook on low for 360 minutes or high for 240 minutes until the chicken is cooked through.
  4. Remove the chicken, shred it, and return it to the slow cooker.
  5. If desired, mix the flour with the heavy cream and stir into the soup to thicken.
  6. Add the frozen peas and cook for an additional 30 minutes.
  7. Serve hot, garnished with fresh parsley.

Notes

Serve with crusty bread or biscuits for dipping. This soup can also be made vegetarian by substituting the chicken with a plant-based protein.
