A hearty and flavorful one-pot meal, this Slow Cooker Cajun Red Beans and Rice is packed with protein and perfect for family dinners. Set it and forget it!

Ingredients

  • 1 pound dried red beans
  • 1 link andouille sausage (quartered)
  • 2 links smoked sausage (sliced)
  • 1 each yellow onion (diced)
  • 1 rib celery (diced)
  • 4 cloves garlic (minced)
  • 3 each bay leaves
  • 6 cups water
  • 2 each beef bouillon cubes
  • 1 tablespoon Cajun seasoning

Instructions

  1. Add all the ingredients to a 5 quart (or bigger) slow cooker.
  2. Give a good stir to mix everything well.
  3. Cover with the lid and cook on high for 360 minutes.
  4. For a creamier texture, mash some of the beans against the side of the pot with a fork or spoon.
  5. Serve the beans over rice.

Notes

Consider soaking the dried beans overnight to help them cook evenly. Adjust Cajun seasoning to taste. For a vegetarian version, omit the sausage and use vegetable broth.
