Healthy Unstuffed Cabbage Rolls

A simplified, healthier version of traditional stuffed cabbage rolls made in a slow cooker.

Ingredients

  • 1 head of cabbage, chopped
  • 1 pound ground turkey or lean beef
  • 1 cup cooked rice (white or brown)
  • 1 can (15 oz) diced tomatoes
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 cups vegetable or chicken broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. Add the chopped cabbage to a slow cooker as a base.
  2. Mix together the ground turkey or beef, cooked rice, diced tomatoes, onion, garlic, Worcestershire sauce, and spices in a large bowl.
  3. Pour the meat mixture over the cabbage in the slow cooker.
  4. Pour the broth over everything to keep it moist.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  6. Stir before serving to mix in the cabbage with the filling.

Notes

Serve with a dollop of sour cream or fresh parsley on top. Pairs well with crusty bread or a light salad.
