  • 2 pounds beef stew meat or chuck roast (cut into chunks)
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon paprika
  • 1 medium onion (diced)
  • 3 cloves garlic (minced)
  • 1 ½ cups beef broth
  • 3 tablespoons Worcestershire sauce
  • 1 tablespoon soy sauce (optional for depth)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 2 tablespoons cornstarch
  • 3 tablespoons water (to mix with cornstarch)

Instructions

  1. Season and sear the beef: Pat the beef dry and season it with salt, pepper, garlic powder, onion powder, and paprika. Heat olive oil in a skillet over medium-high heat. Sear the beef chunks on all sides for 2–3 minutes until browned (this step is optional but adds deep flavor). Transfer the beef to the slow cooker.
  2. Build the sauce: Add diced onion and minced garlic over the beef. Pour in beef broth, Worcestershire sauce, soy sauce (if using), thyme, and parsley. Stir gently to combine.
  3. Slow cook: Cook on LOW for 6–7 hours or HIGH for 3–4 hours until the beef is tender and easily pulls apart.
  4. Thicken the gravy: In a small bowl, mix cornstarch and water to create a slurry. Pour it into the slow cooker and stir well. Cover and cook for an additional 20–30 minutes until the gravy thickens.
  5. Serve: Serve the beef tips and gravy over mashed potatoes, egg noodles, or rice. Spoon extra gravy on top for a delightful finish.

Notes

Searing the beef before adding to slow cooker enhances flavor but is optional. You can add vegetables like carrots and potatoes for a complete meal.
