A comforting, hearty stew with tender beef and vegetables, perfect for chilly evenings and family gatherings.

Ingredients

  • 2 pounds beef chuck, cut into 1-inch pieces
  • 4 cups beef broth
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 3 carrots, sliced
  • 3 potatoes, diced
  • 2 teaspoons dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 bay leaf

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the beef and brown on all sides.
  2. Remove the beef and set it aside. In the same pot, add the onions and garlic, sautéing until soft.
  3. Return the beef to the pot and add the broth, carrots, potatoes, thyme, salt, pepper, and bay leaf.
  4. Bring to a boil, then reduce the heat to low and simmer for 90 to 120 minutes, until the beef is tender.
  5. Remove the bay leaf before serving.

Notes

Serve hot with crusty bread or a simple green salad. Leftovers can be refrigerated for 3-4 days or frozen for up to 3 months.
