Healthy Crockpot Lasagna Soup

A comforting and nutritious soup that captures the classic flavors of lasagna, made easy in a slow cooker.

Ingredients

  • 2 lbs ground beef
  • 1/2 yellow onion, diced
  • 3 tsp garlic, minced
  • 14.5 oz diced tomatoes
  • 14.5 oz crushed tomatoes
  • 1/3 cup tomato paste
  • 5 cups beef broth
  • 2 tsp basil
  • 1 tsp oregano
  • 1 tsp rosemary
  • 1 tsp thyme
  • Salt & pepper, to taste
  • 9 oz lasagna noodles, broken into pieces
  • 1 cup mozzarella cheese, grated
  • 1/2 cup Parmesan cheese, grated
  • Ricotta cheese, for serving
  • Fresh basil, for garnish

Instructions

  1. In a large pan, add the ground beef and brown for 2–3 minutes.
  2. Add the garlic, salt, and pepper, then stir in the diced onion. Continue cooking until the beef is mostly browned, about a few more minutes.
  3. Transfer the meat mixture to your slow cooker. Add the diced tomatoes, crushed tomatoes, tomato paste, and beef broth, along with all the dried herbs. Stir until well combined.
  4. Set your Crockpot to low and cook for 360 minutes (6 hours).
  5. After 300 minutes (5 hours), break the lasagna noodles into smaller pieces and stir them into the soup. Put the lid back on and let it cook for the final hour.
  6. With 30 minutes left, stir in the freshly grated mozzarella and Parmesan cheese. Allow it to melt into the soup.
  7. When the cooking time is up, taste and season with additional salt and pepper if needed. Ladle the soup into bowls. Top with a scoop of ricotta and some fresh basil before serving.

Notes

Feel free to customize with extra vegetables or substitute meat for a vegetarian option.
