A comforting slow cooker dish featuring tender chicken wrapped in soft tortillas and smothered in savory enchilada sauce.

  • 2 pounds boneless, skinless chicken breasts
  • 1 can (10 oz) enchilada sauce
  • 1 can (10 oz) cream of chicken soup
  • 1 cup sour cream
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 8 flour tortillas
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • Chopped green onions and cilantro for garnish (optional)

Instructions

  1. Place the chicken breasts in the slow cooker.
  2. Mix the enchilada sauce, cream of chicken soup, sour cream, garlic powder, and cumin in a separate bowl.
  3. Pour half of this sauce over the chicken, ensuring it is well coated.
  4. Cover and cook on low for 360 minutes or high for 240 minutes, until the chicken is cooked through.
  5. Shred the chicken with two forks.
  6. Lay out a tortilla, add some shredded chicken and cheese, then roll it up.
  7. Place the rolled tortillas seam-side down in a baking dish.
  8. Pour the remaining sauce over the top and sprinkle with more cheese.
  9. Cover and cook on low for an additional 30 minutes until heated through and cheese is melted.
  10. Garnish with chopped green onions and cilantro if desired.

Notes

To save time, you can use rotisserie chicken instead of raw chicken. Adjust the spice level by adding diced jalapeños or using a spicier enchilada sauce.
