A comforting and hearty one-pot meal featuring ground beef, potatoes, and melted cheese, perfect for busy weeknights or family gatherings.

Ingredients

  • 1 lb ground beef
  • 4 cups diced potatoes
  • 1 can (15 oz) corn, drained
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup shredded cheese (cheddar or your choice)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Optional: parsley for garnish

Instructions

  1. Brown the ground beef with the chopped onion and minced garlic in a skillet. Drain any excess fat.
  2. Combine the browned beef, diced potatoes, corn, black beans, and cream of mushroom soup in the crockpot. Stir to combine well.
  3. Season with salt and pepper to taste.
  4. Cover and cook on low for 360 minutes (6 hours) to 480 minutes (8 hours), or high for 240 minutes (4 hours), until the potatoes are tender.
  5. Sprinkle the shredded cheese on top about 15 minutes before serving and cover until melted.
  6. Serve warm, garnished with parsley if desired.

Notes

For extra flavor, consider adding bell peppers or jalapeños. Substitute ground turkey or chicken for a lighter version. For vegetarian, leave out the meat and add more vegetables.
