A comforting chicken pot pie made in a slow cooker, featuring tender chicken, fresh vegetables, and a flaky pie crust.

Ingredients

  • 2 pounds of boneless, skinless chicken thighs
  • 1 cup of chopped carrots
  • 1 cup of chopped potatoes
  • 1 cup of frozen peas
  • 1 onion, diced
  • 3 cloves of garlic, minced
  • 1 can of cream of chicken soup
  • 1 cup of chicken broth
  • 1 teaspoon of thyme
  • Salt and pepper to taste
  • 1 refrigerated pie crust

Instructions

  1. In a slow cooker, add the chopped carrots, potatoes, peas, onion, and garlic.
  2. Place the chicken thighs on top of the vegetables.
  3. In a bowl, mix the cream of chicken soup, chicken broth, thyme, salt, and pepper. Pour the mixture over the chicken.
  4. Cover and cook on low for 360 minutes or on high for 240 minutes.
  5. About 30 minutes before serving, roll out the pie crust and place it over the filling in the slow cooker.
  6. Cover and continue cooking until the crust is golden.
  7. Serve hot and enjoy your homemade chicken pot pie!

Notes

Store leftovers in an airtight container for up to three days. To freeze, do so before adding the pie crust.
