Delicious Crockpot Taco Rice Soup

A warm and comforting taco rice soup made easy in the crockpot, perfect for busy days.

Ingredients

  • 2 cups cooked rice
  • 1 pound ground beef or turkey
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 packet taco seasoning
  • 4 cups chicken or vegetable broth
  • 1 can diced tomatoes
  • 1 onion, diced
  • 1 bell pepper, diced
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Toppings: shredded cheese, sour cream, cilantro, lime wedges

Instructions

  1. Brown the ground beef or turkey over medium heat until fully cooked. Drain excess fat.
  2. Combine the cooked rice, black beans, corn, taco seasoning, chicken broth, diced tomatoes, onion, bell pepper, garlic powder, and the cooked meat in a crockpot.
  3. Stir to combine all ingredients.
  4. Cook on low for 360-480 minutes or on high for 180-240 minutes.
  5. Taste and adjust seasoning with salt and pepper.
  6. Serve hot, topped with cheese, sour cream, cilantro, and a squeeze of lime.

Notes

Use leftover rice for quicker prep. Substitute proteins or add jalapeños for heat.
