A comforting chicken vegetable stew packed with rich flavors, perfect for chilly evenings or family gatherings.

Ingredients

  • 2 lbs chicken (cut into pieces)
  • 2 carrots (sliced)
  • 2 potatoes (diced)
  • 1 onion (chopped)
  • 2 celery stalks (sliced)
  • 3 cloves garlic (minced)
  • 4 cups chicken broth
  • 1 cup green beans (trimmed and cut)
  • 1 tsp thyme
  • 1 tsp rosemary
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chicken pieces and sear until browned on all sides. Remove and set aside.
  2. In the same pot, add onions and garlic, sautéing until softened.
  3. Add carrots, potatoes, and celery; cook for about 5 minutes.
  4. Stir in the chicken back into the pot.
  5. Pour in chicken broth and bring to a boil.
  6. Add green beans, thyme, rosemary, salt, and pepper.
  7. Reduce heat and let simmer for about 30-40 minutes until vegetables are tender and chicken is cooked through.
  8. Serve hot.

Notes

For extra flavor, marinate the chicken in herbs and spices for a few hours before cooking. This stew can also be made in a slow cooker.
