A hearty and comforting dish made with potatoes, ground beef, and melty cheese, perfect for busy weeknights or gatherings.

Ingredients

  • 4 medium potatoes, diced
  • 1 pound ground beef or turkey
  • 1 packet taco seasoning
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup salsa
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • Sour cream and chopped green onions for serving (optional)

Instructions

  1. Add the diced potatoes, cooked ground beef, taco seasoning, black beans, corn, and salsa to a crockpot. Stir to combine.
  2. Cover and cook on low for 360 minutes or on high for 240 minutes, until the potatoes are tender.
  3. Sprinkle the cheese on top about 30 minutes before serving and cover to let it melt.
  4. Serve warm, topped with sour cream and chopped green onions if desired.

Notes

You can use sweet potatoes for different flavor and feel free to mix in more vegetables.
