A comforting one-pot dish of red beans simmered with smoked sausage, served over rice, embodying the flavors of Louisiana.

  • 1 onion, diced
  • 1 celery stalk, diced
  • 1 bell pepper, diced
  • 2 cups smoked sausage, sliced
  • 4 cups vegetable broth
  • 2 cloves garlic, minced
  • 1 teaspoon cayenne pepper
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Cooked rice for serving
  • Green onions for garnish

Instructions

  1. Rinse and soak the red beans overnight. Drain before using.
  2. In a crockpot, combine the soaked red beans, diced onion, diced celery, diced bell pepper, sliced smoked sausage, vegetable broth, minced garlic, cayenne pepper, thyme, salt, and pepper.
  3. Stir to combine, ensuring the beans are covered with liquid.
  4. Cover and cook on low for 360 to 480 minutes until the beans are tender and flavors are melded.
  5. Serve the red beans over cooked rice and garnish with chopped green onions.
