  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream or coconut milk
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Fresh cilantro, for garnish
  • Lime wedges, for serving

Instructions

  1. In a crockpot, combine corn, onion, garlic, and vegetable broth.
  2. Add chili powder, cumin, salt, and pepper.
  3. Cook on low for 360-480 minutes or high for 180-240 minutes.
  4. Use an immersion blender to blend the soup until desired consistency is reached.
  5. Stir in heavy cream or coconut milk.
  6. Serve hot, garnished with fresh cilantro and lime wedges.

Notes
