A comforting and flavorful Mexican dish made with tender slow-cooked beef and a blend of spices, perfect for family gatherings.

Ingredients

  • 3 lbs beef chuck roast
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 3 dried guajillo chilies
  • 2 dried ancho chilies
  • 1 tsp cumin
  • 1 tsp oregano
  • Salt and pepper to taste

Instructions

  1. Toast the dried chilies in a skillet over medium heat until fragrant. Remove stems and seeds.
  2. Combine chilies, onion, garlic, cumin, oregano, and beef broth in a blender. Blend until smooth.
  3. Add the beef chuck roast to a crockpot and pour the blended sauce over the meat.
  4. Season with salt and pepper.
  5. Cover and cook on low for 480 minutes or until the meat is tender.
  6. Shred the beef and serve as is or in tacos with consomme.

Notes

Marinate the beef in the blended sauce overnight for extra flavor. Adjust the spice level by using additional dried chilies or cayenne pepper.
