Savory meatballs combined with sweet pineapple create a delicious dish perfect for any occasion.

Ingredients

  • 1 pound ground beef
  • 1 cup breadcrumbs
  • 1/2 cup finely chopped onion
  • 1/4 cup chopped fresh ginger
  • 1 egg
  • 1/4 cup soy sauce
  • 1 can (15 oz) pineapple chunks, drained
  • 1/2 cup brown sugar
  • 1/4 cup ketchup
  • 1 tablespoon rice vinegar
  • 1 tablespoon cornstarch
  • 1/4 cup water

Instructions

  1. Mix ground beef, breadcrumbs, onion, ginger, egg, and soy sauce in a large bowl until well combined.
  2. Form into meatballs about 1 inch in diameter.
  3. Place meatballs in the crock pot.
  4. Mix pineapple, brown sugar, ketchup, rice vinegar, cornstarch, and water in a separate bowl until smooth.
  5. Pour sauce over meatballs.
  6. Cover and cook on low for 6-8 hours or until meatballs are cooked through.
  7. Serve hot as an appetizer or main dish.

Notes

Use fresh ginger for the best flavor. For a spicier kick, add crushed red pepper flakes to the sauce. Do not overcrowd the meatballs in the crock pot.
