A comforting slow-cooked meal featuring tender beef and buttery potatoes, perfect for cozy evenings.

Ingredients

  • 2 lbs beef stew meat or chuck (cut into 1-inch cubes)
  • 1.5 lbs baby potatoes (halved)
  • 6 tbsp butter (melted, divided)
  • 1 tbsp olive oil
  • 5 cloves garlic (minced)
  • 1 cup beef broth
  • 1 tbsp Worcestershire sauce
  • 1.5 tsp Italian seasoning
  • 1 tsp paprika
  • 1 tsp salt (plus more to taste)
  • 1/2 tsp black pepper
  • 2 tbsp chopped parsley (optional)

Instructions

  1. Season the beef with salt, pepper, paprika, and half the Italian seasoning.
  2. Heat olive oil in a skillet and sear the beef for 1–2 minutes on each side (optional).
  3. Add the halved baby potatoes to the slow cooker.
  4. Place the seasoned beef on top of the potatoes.
  5. Whisk together the melted butter, minced garlic, beef broth, Worcestershire sauce, and the remaining Italian seasoning in a bowl.
  6. Pour this mixture over the beef and potatoes in the crockpot.
  7. Cook on LOW for 360–480 minutes or HIGH for 180–240 minutes until the meat is tender.
  8. Stir the mixture, adjust the seasoning, and add the remaining butter and chopped parsley before serving.

Notes

For extra flavor, marinate the beef in the broth and seasonings for a few hours before cooking. Feel free to add vegetables for variety.
