A warm and hearty stew made with ground beef and simple vegetables, perfect for busy days and gatherings.

Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 potatoes, diced
  • 1 can diced tomatoes
  • 2 cups beef broth
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp Italian seasoning
  • 1 cup green beans, chopped

Instructions

  1. Brown the ground beef with the chopped onion in a skillet. Drain the fat.
  2. Transfer the ground beef and onions to the crock pot.
  3. Add the carrots, potatoes, diced tomatoes, beef broth, garlic powder, salt, black pepper, Italian seasoning, and green beans.
  4. Stir to combine all the ingredients.
  5. Cover and cook on low for 360 minutes or high for 240 minutes, until the vegetables are tender.
  6. Serve hot.

Notes

Serve with crusty bread or over rice. Store leftovers in an airtight container for up to 3 days, or freeze for up to 3 months.
