A warm and comforting soup made with leftover ham, tender beans, and fresh vegetables, perfect for family gatherings.

Ingredients

  • 1 ham bone
  • 2 cups dried white beans (e.g., navy beans)
  • 8 cups chicken broth
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 1 bay leaf
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Rinse the beans under cold water and soak them overnight in water. Drain the beans before using.
  2. Combine the ham bone, soaked beans, chicken broth, onion, carrots, celery, garlic, and bay leaf in the crockpot.
  3. Cook on low for 480 minutes (8 hours) or high for 240 minutes (4 hours), until the beans are tender.
  4. Remove the ham bone, shred any remaining meat, and return it to the soup.
  5. Season with salt and pepper to taste.
  6. Serve hot, garnished with fresh parsley if desired.

Notes

This soup can be served with crusty bread or warm cornbread. It’s ideal for both lunch and dinner, especially on chilly days.
