Crock Pot Chicken Marsala

A comforting and hearty chicken dish with mushrooms and Marsala wine, cooked to perfection in a slow cooker.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup mushrooms, sliced
  • 1 cup marsala wine
  • 1 cup chicken broth
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup heavy cream
  • Fresh parsley for garnish

Instructions

  1. Heat the olive oil over medium heat in a skillet. Season the chicken breasts with salt and pepper, then sear them on both sides until golden brown (about 4-5 minutes per side).
  2. Transfer the seared chicken to the crockpot.
  3. Add the garlic and mushrooms to the same skillet, and sauté until softened.
  4. Pour in the marsala wine and chicken broth, scraping the bottom of the pan to release any browned bits.
  5. Pour this mushroom mixture over the chicken in the crockpot.
  6. Cover and cook on low for 6-7 hours or high for 3-4 hours.
  7. Stir in the heavy cream to the sauce once cooked.
  8. Serve garnished with fresh parsley.

Notes

For extra flavor, marinate chicken in Marsala wine for an hour before cooking. Use a cornstarch slurry for a thicker sauce, if desired.
