A comforting and creamy soup that combines classic cheeseburger flavors, perfect for busy fall days.

Ingredients

  • 1 pound ground beef
  • 4 cups diced potatoes
  • 1 cup cheddar cheese, shredded
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup milk
  • Salt and pepper to taste
  • Optional toppings: bacon bits, green onions

Instructions

  1. Brown the ground beef, onion, and garlic in a skillet over medium heat until cooked through. Drain excess fat.
  2. Transfer the beef mixture to a crock pot. Add the diced potatoes, beef broth, and season with salt and pepper.
  3. Cover and cook on low for 360-420 minutes or high for 180-240 minutes.
  4. Stir in the milk and cheddar cheese about 30 minutes before serving.
  5. Cook until the cheese is melted and the soup is creamy.
  6. Serve hot, topped with bacon bits and green onions if desired.

Notes

For a lighter version, substitute ground turkey and low-fat cheese. Consider adding veggies for extra nutrition.
