A comforting and flavorful slow-cooked dish of chicken thighs simmered in a sweet and smoky bourbon sauce.

  • 3 Pounds Chicken Thighs (Boneless, skinless)
  • 1 Cup Light Brown Sugar
  • 1 Cup Soy Sauce
  • 1/3 Cup Bourbon Whisky
  • 2 Tablespoons Apple Cider Vinegar
  • 1/2 teaspoon Ground Ginger
  • 1 Tablespoon Honey
  • 1/2 teaspoon Red Pepper Flakes
  • 4 Cloves Garlic
  • 3 Tablespoons Cornstarch
  • 2 Tablespoons Water
  • 1/4 Cup Green Onions

Instructions

  1. Place the chicken thighs (well trimmed) into the slow cooker.
  2. In a medium mixing bowl, add the remaining ingredients (except the cornstarch, water, and green onions). Mix together with a whisk.
  3. Pour the mixture over the top of the chicken thighs.
  4. Cover and cook on high for 240 minutes, or low for 360 minutes.
  5. Once done, remove the chicken thighs to a plate and roughly chop them.
  6. In a separate bowl, add the cornstarch and water. Mix until the cornstarch is dissolved.
  7. Pour the cornstarch mixture into the sauce in the crock pot and whisk to combine.
  8. Add the chopped chicken back to the sauce and stir to blend. Cover again and let it come back to bubbling, then turn off the crock pot.
  9. Sprinkle with chopped green onions before serving over rice.

Notes

For a thicker sauce, let it simmer longer after adding the cornstarch. Adjust red pepper flakes for desired heat. Add vegetables like bell peppers for extra nutrition.
