Crock Pot Bourbon Chicken

A cozy and flavorful slow-cooked chicken dish with a sweet and savory bourbon sauce, perfect for busy evenings or gatherings.

  • 3 Pounds Chicken Thighs (Boneless, skinless)
  • 1 Cup Light Brown Sugar
  • 1 Cup Soy Sauce
  • 1/3 Cup Bourbon Whisky
  • 2 Tablespoons Apple Cider Vinegar
  • 1/2 teaspoon Ground Ginger
  • 1 Tablespoon Honey
  • 1/2 teaspoon Red Pepper Flakes
  • 4 Cloves Garlic
  • 3 Tablespoons Cornstarch
  • 2 Tablespoons Water
  • 1/4 Cup Green Onions

Instructions

  1. Place the chicken thighs (well trimmed) into the slow cooker.
  2. In a medium mixing bowl, add the remaining ingredients (except the cornstarch, water, and green onions). Mix together with a whisk.
  3. Pour over the top of the chicken thighs.
  4. Cover and cook on high for 4 hours, or low for 6 hours.
  5. Remove the chicken thighs to a plate and roughly chop them.
  6. Add the cornstarch and water to a mixing bowl and mix until the cornstarch is dissolved.
  7. Pour into the sauce in the crock pot and mix with a whisk.
  8. Add the chicken back to the sauce, stir to combine, then cover again. Allow to come back to bubbling, then turn off the crock pot.
  9. Sprinkle with chopped green onions and serve over rice.

Notes

For a thicker sauce, let it cook longer in the crock pot after adding the cornstarch mixture.
