A warm and comforting soup that combines the rich flavors of chicken parmesan in an easy-to-make version, perfect for chilly days.

Ingredients

  • 1 lb boneless, skinless chicken breast
  • 1 cup chicken broth
  • 1 can (14 oz) diced tomatoes
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 cups baby spinach
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Place the chicken breasts in the crockpot.
  2. Add the chicken broth, diced tomatoes, minced garlic, Italian seasoning, salt, and pepper on top.
  3. Cook on low for about 360 minutes or on high for 240 minutes until the chicken is cooked through.
  4. Remove the chicken, shred it with two forks, and return it to the pot.
  5. Stir in the heavy cream, Parmesan cheese, and baby spinach.
  6. Cook for an additional 30 minutes on low until the spinach is wilted and everything is heated through.

Notes

For a quicker option, use rotisserie chicken. You can also use half-and-half instead of heavy cream for a lighter version.
