A comforting and hearty pumpkin chili cooked in a slow cooker, perfect for fall and packed with flavors from beans and spices.

Ingredients

  • 1 can pumpkin puree
  • 1 can kidney beans, rinsed and drained
  • 1 can black beans, rinsed and drained
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 2 cups vegetable broth
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Optional toppings: sour cream, cheese, green onions

Instructions

  1. In a Crockpot, combine pumpkin puree, kidney beans, black beans, onion, garlic, bell pepper, and vegetable broth.
  2. Add chili powder, cumin, salt, and pepper.
  3. Stir well to combine all ingredients.
  4. Cover and cook on low for 360 minutes or on high for 240 minutes.
  5. Serve hot, topped with optional toppings as desired.
