A warm and comforting Chicken Gnocchi Soup perfect for chilly evenings and serving family or friends.

Ingredients

  • 2 cups shredded chicken
  • 1 package potato gnocchi
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery, and sauté until softened (about 5 minutes).
  3. Stir in the garlic and cook for another minute.
  4. Add the shredded chicken, chicken broth, and thyme. Bring to a simmer.
  5. Add the gnocchi and cook according to package instructions (usually about 3-5 minutes).
  6. Stir in the heavy cream and season with salt and pepper to taste.
  7. Serve hot and garnish with fresh parsley.

Notes

Consider using rotisserie chicken for convenience. Allow the soup to cool completely before storing. Freeze without gnocchi to prevent them from becoming mushy.
