A hearty and creamy Cajun potato soup with andouille sausage, perfect for chilly evenings.

Ingredients

  • 1 lb andouille sausage, sliced
  • 4 large potatoes, diced
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup cheddar cheese, shredded
  • 2 teaspoons Cajun seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the andouille sausage and cook until browned.
  2. Add onion, carrots, and celery to the pot and sauté until softened.
  3. Stir in the diced potatoes and Cajun seasoning, then pour in the chicken broth.
  4. Bring to a boil, then reduce heat and let it simmer until potatoes are tender, about 15-20 minutes.
  5. Stir in the heavy cream and cheddar cheese, cooking until the cheese is melted and the soup is creamy.
  6. Season with salt and pepper to taste, then serve warm.

Notes

For extra spice, add more Cajun seasoning or hot sauce. This soup can be customized with different vegetables or made vegetarian.
