Delicious and easy-to-make Butterscotch Crunch Cake Bars with a perfect balance of chewy and crunchy textures.

  • 1 15.25-oz yellow cake mix
  • 1 3.4-oz instant vanilla pudding mix
  • 3/4 cup vegetable oil
  • 1/4 cup milk
  • 2 eggs
  • 1 11-oz bag butterscotch chips
  • 1 1/4 cup chopped pecans
  • Pinch of salt

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit. Spray the bottom and sides of a 13×9 pan with cooking spray and set it aside.
  2. Combine the vegetable oil, milk, and eggs in a bowl. Stir them together until the eggs are well mixed.
  3. Add the yellow cake mix and instant vanilla pudding mix to the wet ingredients. Stir until everything is combined. It’s okay if there are some small lumps.
  4. Spread the batter evenly in the bottom of the prepared pan.
  5. Top the batter with butterscotch chips and then sprinkle the chopped pecans on top.
  6. Add a hefty pinch of salt over the top. Bake in the oven for about 25 minutes, or until the center is set and the edges start to brown.
  7. Remove from the oven and let them cool for at least 15 minutes. You can serve them warm or let them cool completely, then cut them into squares.
  8. Store any leftovers in an air-tight container for up to 5 days.

Notes

For an extra touch, dust with powdered sugar or serve with a scoop of vanilla ice cream.
