A comforting and creamy potato soup made easy in the crockpot, perfect for chilly days.

Ingredients

  • 4 large potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Chives or green onions for garnish

Instructions

  1. Add the diced potatoes, chopped onion, minced garlic, and broth to the slow cooker.
  2. Cover and cook on low for 360-480 minutes, or until the potatoes are tender.
  3. Mash some of the potatoes in the pot to thicken the soup.
  4. Stir in the heavy cream and season with salt and pepper.
  5. Garnish with chives or green onions before serving.
