A hearty and comforting beef barley soup, perfect for warming up chilly evenings with family.

Ingredients

  • 1 lb beef stew meat, cut into cubes
  • 1 cup barley
  • 4 cups beef broth
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 1 bay leaf
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the beef stew meat and cook until browned on all sides.
  3. Add the onion, carrots, celery, and garlic, and sauté for 5-7 minutes.
  4. Stir in the barley, beef broth, bay leaf, salt, and pepper.
  5. Bring the mixture to a boil, then reduce the heat and let it simmer for about 90-120 minutes, or until the beef is tender and the barley is cooked.
  6. Remove the bay leaf before serving.

Notes

Garnish with fresh herbs like parsley. Pair with crusty bread or a side salad. Store in an airtight container in the refrigerator for up to 3 days, or freeze for up to 3 months.
